I have a fondness for the fusion of ginger and
citrus juice; it brings an explosion of

which I personally find irresistible.
If you were stranded on a desert island, what
three ingredients would you choose to have?
Miso paste, soba noodles and coriander.
These ingredients hold a special place in my
heart and offer a wide range of possibilities
for creative culinary experimentation.
Your favorite restaurant in or around Tulum?
For me, Vai-Vén stands out. Its reputation
for serving the best burritos norteños in the
area is well deserved.
Which overseas restaurant is on your wish list?
Silo in London, led by chef Douglas
McMaster. This pioneering zero-waste
restaurant fascinates me, and I’m in awe of
its commitment towards sustainable and
environmentally conscious dining. One day
I will immerse myself in that commendable
