To create template for a different count fabric, measure the width and height of the stitched piece and add at least 1/8" all around the stitched area for new template size. Using the template, cut two bell shapes each from Skirtex, interfacing and batting pieces. Center and fuse a bell-shape interfacing to the back of the stitched piece and the cotton fabric. Glue batting piece to each bell-shape Skirtex piece. With interfacing toward batting, cover the batting/Skirtex unit with the stitched piece. Trim linen 1/2" beyond Skirtex unit. Apply glue all around the edges of Skirtex unit and fold back linen edges. Finger-press and, if needed, cut small slits or wedges in linen to enable easy folding. Let the glue dry under pressure to complete the front panel. Repeat the same process with the cotton fabric to make the back panel. Cut a 6" piece of twisted cording. Thread the cording through the jingle bell top slot; align free ends and make an overhand knot near the slot. Glue and sew free cording ends to the wrong side of the front panel, aligning ends with the lower-center flower. In model, the jingle bell is suspended 1" from the ornament lower edge. Apply glue to the wrong side of the back panel. Place the front and back panel wrong sides together. Press together firmly; let dry. Using slip stitch or ladder stitch and ecru thread, sew front and back panel edges together. Starting and ending at opposite sides of the jingle bell loop, pin cording along the edges; leave extra cording at the top to form the hanger. Sew cording to the edge of the ornament with bronze sewing thread. Finishing Instructions Flat-Ornament Finishing Instructions Pillow-Ornament Finishing Instructions Materials • Padded mat board • Thin quilt batting (optional) • Coordinating fabric for backing • Double-sided tape (optional) • Hot-glue gun or craft glue (optional) Materials • Coordinating backing fabric • Polyester fiberfill • Fabric-marking pencil • Straight pins • Sewing machine (optional) 1. Cut two pieces of mat board to desired ornament size (1/8”–1” larger than stitched design). If desired, cut quilt batting to same size as mat board; adhere batting to board using double-sided tape. 2. Press stitched piece from reverse side, straightening as much as possible. 3. Center stitched piece faceup on batting side of mat board and trim around stitched piece so fabric is at least 1/2” wider than edge of mat board. Keeping fabric taut, carefully fold excess fabric to the back and glue to mat board. Repeat with second piece of mat board and backing fabric. 4. With wrong sides together, blindstitch or glue backing piece to ornament. 5. Attach desired trim and hanger. 1. Press stitched piece from reverse side, straightening as much as possible. 2. Measure desired distance (1/8”–1”) from stitched design on all sides and draw a line this distance from edge of design all around, staying on fabric grain line if possible. Do not cut fabric. Place stitched piece on backing fabric with right sides together and pin layers together along edge of stitched design. Note: If desired, trim can be sandwiched between layers, with decorative edge to the inside. 3. Sew around ornament along drawn line, leaving bottom of ornament open. Trim excess fabric to 1/4” seam allowance. Trim corners to 1/8” seam allowance. Turn ornament to right side. Press. 4. Stuff ornament as desired with fiberfill. Turn bottom fabric edges inside and sew the opening closed. 5. Attach desired trim and hanger. Hoop Finishing Instructions Materials • Embroidery hoop • Felt for backing, cut to size of hoop • Thread and hand-sewing needle (optional) • White craft glue 1. Press stitched piece from reverse side, straightening as much as possible. 2. Place stitched piece in hoop, centering design and positioning hoop screw at center top. Trim excess fabric to leave 1” border around edge. 3. Carefully fold excess fabric to back of hoop; if needed, excess fabric can be laced together with thread to hold in place. Glue felt to back of hoop, trimming as needed; allow to dry overnight. Twisted-Cording Instructions Materials • Embroidery floss, pearl cotton or other fiber to complement stitching Note: To determine amount needed, see step 1. Refer to ornament color code for specific colors and fibers used. • Mini cording drill or hand mixer with one beater • Large carabiner 1. To determine the length of floss needed, multiply the desired finished length of cording by three, making sure to include any length needed for the hanger when finishing an ornament. 2. Place all lengths of floss together and tie a knot in each end. 3. If using a cording drill, slip one knotted end of floss onto hook. Make a loop at the opposite end and slip onto the carabiner; attach the carabiner to a standing object such as a drawer pull or doorknob. Pull so that floss is taut. Operate drill in a forward direction floss will begin to twist. Continue twisting until floss is very tightly twisted and is about to twist upon itself. 4. Carefully remove knotted end from drill hook, being extremely careful not to let go of end and keeping twisted floss taut. 5. Tie end that was removed from drill to carabiner, still keeping floss taut. Place hook of drill in center of length of twisted floss. Operate drill in a reverse direction until desired twist for cording is achieved. Remove drill. Remove ends from carabiner and secure with another knot. 6. If using hand mixer, follow steps 3 and 4, attaching one knotted end of floss to beater and using slow speed. Remove loop from carabiner and fold length in half, making sure to keep twisted floss taut. 7. Twist both ends of folded length until desired look is achieved. Tie ends opposite from folded end together to hold twist. Note: Cording can be made by one person; however, the procedure can be awkward at times, especially when dealing with long lengths of floss—an extra set of hands is always helpful! f

I like to put up twinkle lights in October, and we start decorating on the first day of November. The glow of the tiny string lights brings so much happiness and warmth into our home. Our motto is, “It’s never too early for twinkle lights!” Artmishka Cross Stitch Anna Gutova My story as a cross stitch designer started at Christmas. I was 5 years old and I was thinking about a Christmas gift for my mom. My kindergarten teacher was telling us that the best gift is the one that we make with our own hands. In Mom’s craft bag, I found some linen and stranded cotton. I took a sheet of squared paper and drew a simple chart with a sheep in the field using the colors of cotton that I had. Then I cross stitched the piece and finished it as a napkin by fraying the edges. I knew that my mom loved nature and I thought that she would appreciate the theme. Since then I have created hundreds of designs, but that very first one, almost 40 years later, is still kept in my mom’s house and cherished as the most precious. Chocolate Salami 180 grams English digestive biscuits (or graham crackers) ¾ cup your favorite nuts, coarsely chopped 200 grams dark or milk chocolate 90 grams unsalted butter 6 tablespoons whole milk Confectioners’ sugar for coating Place biscuits in a large zip-close bag and crush them using a rolling pin until you have small, coarse crumbs. Transfer crumbs to a large bowl and stir in nuts. In a medium bowl, place chocolate and butter. Heat in the microwave or in a double boiler until melted and smooth. Add milk and stir. Add chocolate mixture to crumb mixture and mix until combined. Spread the mixture out on parchment paper or plastic wrap, and shape it into a 102 Just CrossStitch log using a spatula or spoon. Roll up the paper and wrap it like candy. Place in the refrigerator for several hours until firm. After chilling, remove log from the paper and dust with confectioners’ sugar on all sides. Cut into slices and serve. Keep in the refrigerator or freezer. If frozen, place at room temperature for a few minutes before cutting or serving. My brother and sister and I would all sleep under the tree and stay awake and talk forever about what Santa would bring us. We had a set of lights that played Christmas music, so we fell asleep under the twinkling lights with Christmas music playing in our ears. Now, my kids like to sleep under the Christmas tree too, and it brings such joy to my heart knowing the excitement they are feeling. However, he made up for this whatever the time of the year he came home. On several occasions I remember celebrating Christmas in the summer, including a Christmas tree, a turkey meal and presents! Slowly add warm water, stirring until you’ve added all the water. Use your hands to knead the dough until smooth and pliable; this will take a few minutes. Roll out the dough 1/8-inch thick. Use cookie cutters to cut into desired shapes. Add texture, draw or write on ornaments using your favorite tools. Using a straw, make a hole near top of ornament for hanger. Bake the ornaments in a 300-degree oven for about 1 hour or until hard. Paint and decorate ornaments to your liking. Once paint is completely dry, coat with polyurethane spray for extra longevity. Thread ribbon through hole for hanger and hang on tree. Bobbin and Fred Shannan Grierson Mumma’s Tang-elicious Pickled Onions 500 grams pearl onions 500 milliliters cider vinegar 4 tablespoons brown sugar 10 whole cloves 1 teaspoon mixed herbs* Pinch of salt *To make your own version of English “mixed herbs” combine 1 part each dried herb: thyme, oregano, parsley, marjoram, basil and sage. Soak the onions in warm water for a few minutes; trim tops and peel. Dry on clean kitchen towel. Place vinegar, sugar, cloves, herbs and salt into a pan and heat just enough to melt the sugar and salt; do not boil the mixture. Remove from heat and let cool. Pack the onions into clean, sterilized jars. Once cooled, pour vinegar mixture over the onions. Make sure there are no air pockets, and then seal the jars and store for 1 to 2 months. Keep refrigerated after opening. Boulder Valley Stitching Nikki Ewing My favorite Christmas memory is making cookies with my mom. I grew up in a military family, and each year my mom and I would spend a few days before Christmas making dozens of cookie platters that the Officers’ Wives Club would then take around to all the different facilities on base that stayed open during Christmas. Military bases don’t close for Christmas and not everyone gets to go home for the holidays. It always made me happy to know I helped bring a little happiness and joy to others around our military base. Nikki’s Chai Tea Mix This makes a great hostess gift for parties. Simply place mix in glass canning jars, decorate and give as gifts. 2 cups sugar 2 cups unsweetened instant tea 1½ cups powdered French vanilla nondairy creamer 1¼ cups powdered nondairy creamer 1¼ cups brown sugar ¾ cup nonfat dry milk powder 2 teaspoons cinnamon 1½ teaspoons nutmeg 1¼ teaspoons cardamom ¾ teaspoon ground cloves 1 teaspoon allspice ¼ teaspoon white pepper In a large bowl, combine all the ingredients; mix well. In a food processer, cover and process tea mixture in batches until it’s a very fine powder. Store in an airtight container in a cool dry place for up to 6 months. To prepare hot chai tea: Place 1/4 cup dry mix in a mug. Add 1 to 11/2 cups hot milk (depending on taste preference); stir until well combined. Add a sprinkle of cinnamon or whipped cream to top of mug before serving if desired. Yield: 32 servings (8 cups tea mix). Split Pea Soup Bourbon Balls My mum was brilliant at creating great things to eat. This recipe is one my favorites—it was always what she made when I came home from college. Warning for the faint of heart, during our video shoot, Bourbon Balls were harmed; I repeat, they were harmed! 2 cups split peas soaked for 12 hours 12 cups water Ham bone 1 onion, chopped 2 carrots, chopped 4 ribs celery with the tops, chopped 1 cup milk 2 cups beef stock Ham Salt, pepper and paprika to taste Drain peas and put in a large pan. Add water and ham bone. Cover and simmer for 3 hours. Add chopped vegetables. Cover and simmer for 1 hour. Add milk, beef stock and ham. Stir until soup boils. Season with salt, pepper and paprika. Simmer for 20 minutes. Dames of the Needle Elizabeth Talledo As always, we have been busy, busy this past year. Miguel is still in university, and Isa is living it big in Nashville. We managed to get together and do a couple live videos making cookies for the holidays. The Bourbon Balls we made were a big hit. When I was growing up, we made Bourbon Balls without the coconut flakes and used pecans instead of walnuts. One reason we made them with pecans is because we were lucky enough to have a pecan tree in our back yard and always seemed to have a supply of them to bake with. Isa, Miguel and I are trying to keep up the tradition of being together for the holidays. As we all know, as we get older it is harder and harder to get together. For fun this year we made the person who was opening presents put on a blindfold, and then we put all the presents in front of them before letting them take off the blindfold and go through the 2½ cups vanilla wafer cookies, finely crushed 2 tablespoons unsweetened cocoa powder 1 cup confectioners’ sugar plus additional for coating 1 cup finely chopped pecans (may substitute finely chopped walnuts, or ½ cup finely chopped walnuts and ½ cup coconut flakes) 3 tablespoons corn syrup ¼ cup bourbon (You are on your own in the liquor store on this one!) Combine cookies, cocoa powder, 1 cup confectioners’ sugar and pecans. Add corn syrup and bourbon to the mixture; mix well until all the ingredients are 1 sticky ball but not too moist or they will not roll up into balls. Roll mixture into 1-inch balls and then roll the balls in confectioners’ sugar. Place the balls in a closed container, placing a sheet of waxed paper between layers. If your mixture is extra wet, you may want to roll the balls in confectioners’ sugar a second time before consuming. Wait a minimum of 2 days before eating; 1 to 2 weeks is recommended. Enjoy! Optional: Use honey- or vanilla-infused bourbon to add to the flavoring. Vanillainfused corn syrup may also be used in place of plain corn syrup. Fairy Wool in the Wood Cassandra Cavalca Conforti Pumpkin & Parmesan Soup I live in Parma, Italy, the city known for Parmesan cheese, so I would like to suggest you try this simple and delicious recipe that’s perfect for cold winter days. 1 kilogram of clean pumpkin cut into small pieces 1 onion, grated 1 branch of fresh rosemary 500 milliliters (2¼ cups) vegetable broth Salt 1 teaspoon olive oil Grated Parmesan cheese Combine pumpkin, onion and rosemary in a pot and cover everything with broth. Cook about 20 minutes; the pumpkin must be very soft. Remove the rosemary branch; blend cooked pumpkin mixture with a blender until you get a thick cream. Add a pinch of salt, olive oil and Parmesan cheese. Enjoy your meal! Fireside Originals Carol J. Grant Easy Cheesy Lemon Bars This is my favorite cookie recipe and I love making them especially at Christmas. Thank you, Mom, for this one. 1 (17-ounce) lemon cake mix ½ cup butter or margarine, melted 1 egg slightly beaten 1 can lemon frosting 1 (8-ounce) package cream cheese, room temperature 2 eggs Heat oven to 350 degrees. Grease bottom only of a 13 x 9-inch pan. Combine the cake mix, melted butter and slightly beaten egg. Mix with fork until moist. Pat mixture into the bottom of prepared pan. Mix the frosting with cream cheese; reserve ½ cup of the frosting mixture in a separate bowl and set aside. To the rest of the mixture add 2 eggs and beat for 3 to 5 minutes. Spread over cake mixture. Bake for 30 to 40 minutes. Cool in pan. After bars have cooled, spread the setaside frosting mixture over the top, cut into bars and serve. Serves 20. Frony Ritter Designs Frony Ritter As a kid, our fireplace was a cardboard one that we put up at Christmastime. I spent many hours trying to figure out how Santa was going to get inside a fireplace that wasn’t real, and I made up great stories about how he could get in a cardboard fireplace that doesn’t really have a chimney. One year our parents gave us three girls a choice between going on a vacation or getting a fireplace, and we chose vacation because Santa seemed to have no trouble getting through our beloved cardboard fireplace. Americanized Wassail Bowl I changed this to add two of my favorite ingredients (bourbon and grenadine) to decrease the sweetness, and increase the mirth. I also eliminated brandy and vodka, which are traditionally in the wassail. Adding a couple shakes of cherry bitters also enhances the flavor. Insert cloves into oranges all around the orange. Place oranges, apple cider, lemon juice, grenadine and cinnamon sticks in a large pot and heat. Add bourbon; serve warm. Gentle Pursuit Designs Cissy Bailey Smith What could be better than a puppy for Christmas? When my precious aging Chow/ Border collie, Cora, died, I was devastated by her loss, but I resisted the urgings of my granddaughters to get a puppy. Health- and age-related issues had motivated my father to move in with me, and I needed to focus on caring for him. Having a puppy wasn’t a possibility. Dad enjoyed the way my home was filled with my children and grandchildren several days a week, and he lived happily here with me for 3½ years. His health condition began to deteriorate after a cancer diagnosis, and he passed at the age of 95. I have always enjoyed my own company but without Dad, my home felt rather empty. My daughter and granddaughters thought I simply needed something to look after and were sure that a puppy would be excellent company. After thinking about it and praying about it, and researching dogs of all sizes, I decided to go with a Bernedoodle. When I saw the photo of a sable and white pup, I instantly fell in love. I named the pup Charlie after my dad. He is sweet, awkward and goofy, and loves everyone. For some, it’s the first snowflakes as they softly swirl in a winter sky; for others, it’s the placement of a cherished Christmas ornament upon the highest bough. For me, no words signal the start of the holiday season and the promise of Santa Claus delivering presents more than the lyrics to the 1934 holiday song, Santa Claus Is Comin’ to Town. A favorite of my paternal grandfather’s during the childhood years of his grandchildren, he relished the excitement and anticipation of the season through young eyes, while revering Santa’s choice of picking the holiest night of the year to travel—honoring the night of profound love, giving and goodwill toward men. My family and I wish you a wonderful Christmas with family and friends you treasure. Artichokes 1 tablespoon olive oil 1 clove garlic, peeled and chopped 3 medium to small artichokes, cleaned, washed and thinly sliced 1 to 11/2 cups water 1 small lemon, juiced Fresh parsley, chopped Salt to taste Béchamel Sauce 2 tablespoons butter 2 tablespoons flour Salt to taste 1 cup 2-percent milk Pasta 101/2 ounces dry macaroni or penne 2 tablespoons grated Parmesan cheese Preheat oven to 350 degrees (180 degrees Celsius). For artichokes, place olive oil and garlic in a large saucepan and cook over low to medium heat, stirring often. Add artichokes. Add water and lemon juice; cook about 20 minutes until the sauce thickens. When artichokes are cooked, add parsley and salt. Take half of the cooked artichokes and chop them in a blender to make a cream. For the béchamel sauce, melt the butter in a small saucepan, Stir in flour and salt, and cook slowly for about a minute. Gradually add the milk, stirring constantly. Continue to cook and stir until sauce thickens. For pasta, cook macaroni or penne according to package to al dente stage. Add creamed artichoke and half of béchamel sauce to cooked pasta and then arrange the pasta mix in a buttered baking dish. Spread the remaining artichokes on top, cover with remaining béchamel sauce, and top with Parmesan cheese. Bake for 15 minutes. Haystack Stitching Caroline Seldon Growing up, Father Christmas used to leave his presents at the end of our bed in a pillowcase. Surprisingly, he remembered who got what present but there were no tags. Mum and Dad used to sneak a small colored dot on the presents with C, N and D to identify which present went with which child. I can’t remember at what age we knew that, but we still got that pillowcase every year until we left home. Lovely Christmas memories. 104 Just CrossStitch Pistachio Ricotta Cookies Cookies 12 ounces pistachios 2 cups sugar 1 cup butter, room temperature 1 pound ricotta 2 teaspoons vanilla 2 large eggs 4 cups flour 1 tablespoon baking powder 1 teaspoon salt Icing 2 cups of confectioners’ sugar 3 tablespoons milk Chopped pistachios Cookies Preheat oven to 350 degrees. Place pistachios in a food processor and process until finely ground, about 1 minute. Set aside. In large bowl, with mixer at low speed, beat sugar and butter until blended. Increase mixer speed to high and beat until light and fluffy, about 5 minutes. At medium speed, beat in ricotta, vanilla eggs and ground pistachios until well combined. Reduce mixer speed to low. Add flour, baking powder and salt; beat until dough forms. Drop dough by level tablespoons, about 2 inches apart, onto ungreased JUST-CROSSSTITCH.COM Christmas Ornaments 2020 large cookie sheet. Bake about 15 minutes or until cookies are very lightly golden (cookies will be soft). Icing In a small bowl, stir confectioners’ sugar and milk together until smooth. Redmond My favorite Christmas memory is from when I was a little girl. Every year my mom would make us a Christmas ornament. It started with our handprints when we were babies, and then, as we got older, it changed yearly to cross-stitch, needlepoint or painted wooden ornaments, but all were handmade with each of our name, date and year. I’ve carried on that tradition with my daughter, although I never did her handprint, and over the last couple of years, she’s gotten the ornament a few days after Christmas. Now I am hoping to continue the tradition with my granddaughter, and her first ornament is a handprint. Chocolate Orange Cookies 1 cup sugar 2/3 cup butter, room temperature 1 tablespoon grated orange peel 1 teaspoon fresh orange juice 1 egg 11/2 cups flour 1/2 cup unsweetened cocoa powder 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1 cup semisweet chocolate chips 1/3 cup sugar 1 teaspoon grated orange peel Preheat oven to 350 degrees. Mix together 1 cup sugar, butter, 1 tablespoon orange peel, orange juice and egg. Whisk together flour, cocoa powder, baking powder and baking soda; add to sugar mixture and mix well. Stir in chocolate chips. Roll dough into 11/2-inch balls. Mix 1/3 cup sugar and 1 teaspoon orange peel in a separate bowl. Roll balls in mixture and then place 3 inches apart on a baking sheet. Flatten slightly with a bottom of a glass. Bake 9 to 12 minutes until the edges are just starting to crisp, but centers are a little soft. Let cool. Kathleen Berlew Kathleen Berlew We’ve all been taught that Christmas is about the spirit of the season, not about presents. But I have to admit that some of my best childhood Christmas memories relate to perfectly chosen gifts. On the top of the list is Lite-Brite. I would spend hours in a darkened room punching colorful plastic pegs on black paper and watching a design emerge. (Now that I think of it, Lite-Brite is a lot like my crossstitch computer software.) I also loved Spirograph, with its plastic wheels and colored pens that created swirly designs. Like lots of other children of the 1960s and ’70s, I also received a muchloved Jon Gnagy drawing set one year. In the decades since those childhood holidays I’ve continued my crafty pursuits and gradually turned them into a career. It’s been kind of a roundabout journey, but I believe it started under my family’s Christmas tree. Red Cabbage & Apples This simple side dish makes a sweet and tangy accompaniment to any roasted meat. It can be served hot or at room temperature. 1/4 cup butter 2 Granny Smith apples, peeled, cored and thinly sliced 1 medium onion, diced 1 medium head of red cabbage, sliced 1 cup water 1/2 cup sugar 1 teaspoon salt 1/8 teaspoon black pepper 1 bay leaf Melt butter in large pot over medium heat and sauté apple and onion until slightly tender. Add cabbage and remaining ingredients; stir to combine. Heat mixture to boiling, then reduce heat to low and cover. Simmer until cabbage is very tender (approximately 45 minutes). Recipes & Memories budget. Our idea may not sound original but we did put a twist to it: Whatever ornament you gave had to have a meaning. When Christmas came, we would open ornaments together and listen to the stories of why that ornament had been given. The one thing I had not planned on was how much my children would come to love this tradition. Each Christmas, as we’d decorate the tree, someone would pick up one of the ornaments and repeat the story of its meaning. As our families grew up and we moved apart, we kept up the tradition. Best of all, when my children grew up, got married and had their own families, they each had a boxful of memories to take with them. To this day, G-ma and Papa give ornaments as presents at Christmastime and hopefully create another memory. Ziti With Sausage This dish made with ziti pasta is similar to a lasagna casserole but without the fuss. It’s easy enough for a weeknight but great for company, and it makes a great prep-ahead potluck dish. Serve with a big Italian salad and warm bread. This is a make-everyone-happy dinner! Serves 8–10 1 pound ziti pasta 11/2 pounds ground spicy or sweet Italian sausage (or removed from casings) 4 cloves garlic, minced 1 (28-ounce) can crushed tomatoes 1 teaspoon salt 11/2 teaspoons sugar 1/4 teaspoon crushed red pepper flakes 1 cup heavy cream 1/2 cup grated Pecorino Romano (or Parmigiano Reggiano) cheese, divided use 1/3 cup chopped fresh basil, plus additional for serving 2 cups whole-milk mozzarella cheese, shredded Preheat oven to 425 degrees. Begin by boiling the ziti noodles in salted water until very al dente, about 7 minutes, as it will still continue to cook in the oven. Drain and then place the pasta back into the pot. Set aside. Crumble the sausage into a deep skillet and cook 5 to 6 minutes or until lightly browned. Transfer the cooked sausage to a plate, leaving as much fat in the skillet as possible. Drain all but 1 tablespoon of the fat from the pan and set over low heat. If you don’t have enough fat in the skillet, add olive oil to make up the difference. Add the minced garlic and cook about 1 minute, stirring constantly with a wooden spoon, until soft but not browned. Add the crushed tomatoes, salt, sugar and red pepper flakes and simmer for 10 minutes. Add the heavy cream, 1/3 cup Pecorino Romano and all of the basil to the skillet. Stir in the cooked sausage. Pour the contents of the skillet into the large pot with the pasta and gently stir to combine. Spoon half of the mixture into a 13 x 9 x 2-inch baking dish. Sprinkle with half of the shredded mozzarella and half of the remaining Pecorino Romano. Spoon the remaining pasta mixture on top and sprinkle with the remaining mozzarella and Pecorino Romano. Cover pan tightly with aluminum foil and bake for 25 minutes; then uncover and bake for another 10 to 15 minutes or until the cheese is lightly browned and the pasta is hot throughout. Sprinkle with more basil and serve. Kim Beamish Kim Beamish When our youngest son was around 7 years old, he started asking for a dog. It was close to Christmastime, so we found a cute stuffed puppy dog. It had long ears and a spot over one eye. We put it in a box for Christmas morning, with its front paws and head just over the top edge. Inside the box was a blanket, food dishes, leash and a play toy. When our son saw the puppy on Christmas morning, you would have thought it was the real thing. He took care of that puppy (Bullseye), and the next year, Sasha, a “real” dog, joined our family for the next 15-plus years. Our son still has Bullseye. Christmas Shortbread 2 cups flour 1/2 cup sugar 1/4 teaspoon salt 1 cup butter, room temperature Heat oven to 325 degrees. Blend dry ingredients and then work into butter. Pat dough into an ungreased 9 x 9-inch pan. Pierce with fork every 1/2 inch. Bake for 25 to 30 minutes. Cut while warm. One present was always hidden, and they were given clues hidden in a number of areas to find it. My granddaughter loved this game; it was always her favorite. This last July my granddaughter had her own little one and I’m sure he will be playing the search game too, when he is old enough. Chicken & Pork Terrine 1 tablespoon olive oil, plus extra for brushing 1 onion, finely chopped 2 tablespoon brandy 12 strips bacon 2 skinless chicken breasts cut into 1-centimeter pieces 500 grams ground pork 50 grams pistachios 50 grams dried cranberries 3/4 teaspoon ground nutmeg 2 thyme sprigs, leaves picked Salt and pepper to taste Heat the oil in a medium pan and gently cook onion for 10 minutes until softened. Add the brandy and bubble for 30 seconds, then tip into a large bowl and set aside to cool. Heat the oven to 350 degrees. Use about 10 strips of bacon to line a 9 x 5 x 3-inch loaf pan, leaving the excess hanging over the sides. To cooled onion, add the chicken, pork, pistachios, cranberries, nutmeg, thyme leaves and plenty of seasoning. Mix together. To check seasoning, fry a teaspoon of the mixture, then adjust if needed. Press the mixture into the loaf pan, packing it firmly down, leveling the surface (the meat will shrink as it cooks). Fold any overhanging bacon over the filling and cover with remaining bacon strips. Press down lightly again. Lightly oil a small sheet of foil and press on top of the loaf pan. Wrap the pan well in a double layer of foil, then put into a roasting pan. Half fill the roasting pan with boiling water and cook in the oven for 11/2 hours until the terrine feels solid when pressed. Pierce with a skewer and then hold skewer for 10 seconds—it should be piping hot to touch. Remove the pan and unwrap the outer layers of foil but leave to oiled sheet in place on top. Carefully pour any liquid from the terrine away and leave terrine to cool. Put the loaf pan on tray and place weights on top to weigh it down. Chill overnight. Remove terrine from loaf pan and serve at room temperature with sourdough toast and chutney. No catalog was more anticipated than the Sears Christmas issue. How hard it was to share it with my brother and sister! Stir in flour and ground almonds. Shape into crescents and place on greased (or parchment-lined) cookie sheets. Bake 35 minutes at 300 degrees. When cool, roll in confectioners’ sugar. Gradually mix in confectioners’ sugar. When well combined, press into a foil-lined 13 x 9 x 2-inch cake pan. Melt chocolate and paraffin in double boiler; spread melted chocolate over potato mixture. Cover and refrigerate until set. Using foil, lift candy out of pan. Cut candy into 1-inch squares; discard foil. Store in airtight container. Peanut Butter Balls 1½ cups confectioners’ sugar, sifted 1 cup creamy peanut butter ¼ cup unsalted butter, room temperature 1 pound dipping chocolate (can use regular chocolate too) Stir together confectioners’ sugar, peanut butter and butter until well mixed. Shape peanut butter mixture into 1-inch balls and place them on a baking sheet covered with waxed paper. Let the balls stand for 20 minutes or until dry. Melt the chocolate according to package directions. Drop the balls 1 at a time into the melted chocolate, or spoon the chocolate over the balls. Place back on the waxed paper. Let stand until chocolate set. Store tightly covered in a cool, dry place … unless you’ve eaten them all already! Over the years we’ve made candy cane reindeers, peanut butter cup Christmas trees, stained glass cookies and many others. It’s created many happy memories and proud pictures of the kids with their creations. Easy Candy Bark 1 (20-ounce) package white almond bark or good chocolate, finely chopped 106 Just CrossStitch Toppings of choice: toasted nuts, raisins, dried cranberries, dried apricots (finely chopped), coarsely crushed chocolate cookies, broken pretzels, candy sprinkles, crushed peppermint candies, etc. Place toppings in small, individual bowls. Stove-top method: Melt almond bark or chocolate in heat-safe glass bowl placed over a saucepan of gently simmering water. Stir frequently with rubber spatula until melted and smooth. Microwave method: Place two thirds of bark/chocolate in a microwave-safe glass bowl. Heat on high for 30 seconds; stir. Microwave for another 30 seconds; stir. Repeat heating and stirring until bark/chocolate is melted. Immediately stir in remaining bark/chocolate and allow to sit at room temperature, stirring frequently until smooth. If necessary, heat an additional 15 seconds. Let cool slightly at room temperature. While bark is cooling, line a rimmed baking sheet with parchment paper. Spread bark evenly over parchment with an off-set spatula to about a 10 x 12-inch rectangle. Sprinkle with desired toppings, pressing them down gently to anchor in bark. Refrigerate until completely set. Cut or break into little pieces and serve at room temperature. MTVDesigns Maria Teresa Vitali Brasato Al Barolo 1½ kilograms single piece boneless chuck steak 3 bay leaves 4 cloves 10 juniper berries 1 sprig rosemary 1 bottle Barolo red wine 2 tablespoons butter 2 tablespoons olive oil 3 carrots, finely chopped 2 onions, finely chopped 2 ribs celery, finely chopped Salt and pepper To prepare marinade: Place meat in a large bowl with bay leaves, cloves, juniper berries and rosemary. Cover with wine and allow meat to marinate uncovered for 24 hours in the refrigerator. Melt butter and olive oil in pot over medium heat. Remove meat from marinade and add to pot; discard marinade. Allow meat to simmer on each side until skin is golden brown. Add carrots, onions, celery and remaining wine to pot and simmer together. Cover pot with lid when mixture starts to boil, and allow beef to cook on low heat (325 degrees) for 2 hours, turning meat every 30 minutes. Remove beef from pot and allow to rest on a clean cutting board. While the beef rests, remove vegetables and liquid from pot and puree to make a smooth sauce. Pour pureed sauce mixture back into pot; simmer over low to medium heat for 15 minutes. Remove from heat and pour into a serving pitcher. Slice beef and serve with mashed potatoes topped with sauce. New Year Cookies Seven Layer Dip 2 (16-ounce) cans of refried beans 1 (16-ounce) container sour cream mixed with 2 tablespoons taco seasoning (taco seasoning recipe is below) 1 (8-ounce) container premade guacamole 1 bunch of green onions, sliced Handful of San Marzano tomatoes, diced 1 (2.25-ounce) can sliced black olives, drained 2 cups shredded mild cheddar cheese (we are generous with this) In a 13 x 8 x 2-inch pan, layer the ingredients in order. Let rest for an hour in the fridge for the flavors to blend. Enjoy! Homemade Gluten-Free Taco Seasoning 2 tablespoons onion powder 2 tablespoons garlic powder 1 tablespoon kosher salt 1 tablespoon chili powder ¼ teaspoon crushed dried red pepper flakes 1½ teaspoons ground cumin 1 teaspoon dried oregano 1½ teaspoons cornstarch 1 teaspoon sugar Mix all ingredients well together and store in an airtight container. Cookies 200 grams butter, room temperature 80 grams sugar ¼ teaspoon salt 1½ teaspoons vanilla sugar 1 egg yolk 4 teaspoons of cognac (optional) Pinch nutmeg 300 grams flour Icing Whipping cream Confectioners’ sugar Food coloring (optional) Candy sprinkles (optional) Beat butter with sugar, salt and vanilla sugar. Add the egg yolk, cognac, nutmeg and flour. Knead the dough and form into a ball. Cover with plastic wrap and leave it in the refrigerator for 2 hours. Heat the oven to 350 degrees. Roll out the dough between 2 sheets of baking paper to 3 to 4 millimeters thick. Cut out shapes with cookie cutters. Bake on baking paper for 10 to 15 minutes. While the cookies cool down, prepare icing by whipping cream until peaks form. Gently add confectioners’ sugar to make icing desired consistency and taste. You can make colored icing by adding food coloring. Cover cookies with icing. Add colored sprinkles on top of the icing if desired. Combine flour, soda and spices in a bowl and set aside. Cream brown sugar and butter. Beat in egg and molasses until light and fluffy. Stir in flour mixture just until blended. Chill for 1 hour. Shape dough into ¾-inch balls, roll in granulated sugar and place on lightly greased baking tray about 2 inches apart. Flatten each ball with the bottom of a glass dipped in sugar. Bake cookies for 8 to 10 minutes until set. Makes 8 dozen. Praiseworthy Stitches Pam Lewis & Susan Rohm Ooey Gooey Lemon Cookies 1/2 cup salted butter, room temperature 1 (8-ounce) package cream cheese, room temperature 1 teaspoon fresh lemon zest 11/2 cups sugar 1 large egg, room temperature 1 teaspoon vanilla 1 teaspoon lemon extract 21/4 cups flour 3 teaspoons baking powder 1 cup confectioners’ sugar, divided use Preheat oven to 350 degrees. In a large bowl, using a hand-held mixer, beat butter, cream cheese, lemon zest and sugar until well blended. Add in egg, vanilla and lemon extract. Whisk together flour, baking powder and ½ cup confectioners’ sugar in a separate bowl. With the mixer on low, gradually beat dry ingredients into creamed mixture. Using a 2-tablespoon cookie scoop, scoop dough and then roll in the remaining ½ cup of confectioners’ sugar. Place approximately 6 dough balls on parchment paper-lined baking sheets. (Cookies will spread.) Bake until cookies no longer appear wet on top, 8 to 11 minutes. Remove from oven; after about 5 minutes of cooling on the pan (cookies will be soft!), place on cooling racks to cool completely. Rhona Norrie Rhona Norrie Irish Cream Fudge 2 cups white chocolate chips 1/2 cup sweetened condensed milk 1/4 cup Bailey’s Irish Cream 1 teaspoon vanilla Place the chocolate in a microwavesafe bowl and add the sweetened condensed milk. Heat for 30 seconds and stir well to dissolve the chocolate chips. Heat as needed to fully melt the chocolate chips. Once the mixture is smooth, add in the Bailey’s and vanilla. Fold the fudge mixture out into a parchment paperlined loaf pan. Refrigerate for 2 hours or overnight. Remove from pan and cut into small squares. Enjoy! Then, later, it’s time for drinking and snacking on Bloody Mary’s. I say snacking because of all the goodies my husband or son-inlaw adds to the drink; it’s almost lunch! Later in the day, it’s time for a big Christmas dinner. Yes, it’s all about food for the day! In 2019 I celebrated my 20th anniversary as Rosewood Manor by writing a cookbook/crossstitch book called Be Creative! Cookbook & Cross Stitch Patterns. Apple Danish Biscuit Cups Cups 1 (12-ounce) package refrigerated biscuits Filling 1 (8-ounce) package cream cheese, room temperature 1 egg 1/3 cup sugar 1/8 teaspoon salt 1/2 teaspoon vanilla 1 to 2 medium apples, peeled, cored, sliced and then cut into smaller pieces 1/2 cup chopped pecans or walnuts 1 jar caramel topping Form each biscuit into a cup shape on a parchment-lined baking sheet. Mix together cream cheese, egg, sugar, salt and vanilla. Place some cream cheese mixture into each biscuit cup. Top with apple slices and then nuts. Drizzle caramel topping over nuts. Bake as directed on biscuit package. Be creative! Use other fruits in place of apples. You could also put this all into the Rustic Tart Piecrust. (See the recipe on page 94 of my book!) Roz Watnemo Designs Roz Watnemo It’s been 11 years now since my dear dad passed from this world into his heavenly home, but Christmastime always brings memories of my dad reading the REAL Christmas story from the book of Luke. After the family enjoyed a traditional meal of Mom’s delicious meatballs, mashed potatoes and gravy, torsk (poached cod—a Norwegian favorite), corn and lots of other delicacies, and after all the dishes had been washed and put away, it was time to sit down in the living room by the tree that held many beautifully wrapped packages beneath. Even though the youngest were anxious to get to the gifts, we all knew Dad would reach over for his worn Bible and open to Luke 2: 1–20. The familiar words brought peace and calmness as Dad ended with a prayer for each of us. I’m so blessed to have grown up in the family who honored God and celebrated Christmas this way. Cream Cheese Dip 1 cup chopped pecans 2 tablespoons butter 1/2 teaspoon salt 3 (8-ounce) packages cream cheese, room temperature 1/2 cup chopped green pepper 1 small/medium onion, finely diced 1 (5-ounce) jar dried beef, shredded or diced 4 tablespoons milk 1 cup sour cream Pecan halves In a sauté pan, toast chopped pecans in butter and salt. In a large bowl, combine cream cheese, green pepper, onion, dried beef and milk. Add toasted pecans, combining until pecans are well distributed, and then fold in sour cream. Place in oven-safe dish and bake 20 minutes at 350 degrees. Serve immediately or transfer to small slow cooker to keep warm, if desired. Garnish with pecan halves. Serve with crackers or sturdy chips. Saving Graces Fine Needlearts Elizabeth Spurlock When I was a child, we celebrated two Christmases. The first was the usual American Christmas on Dec. 25, with a tree and gifts. But on Jan. 6, Christmas Eve according to the Julian calendar, we celebrated Christmas in the way of my grandparents, who were of Rusyn descent. Rusyns are the indigenous peoples of the Carpathian Mountains, and despite oppression by various regimes over the last 800 years, they have maintained their ancestral customs. The schwate wecher (holy supper) is a solemn feast held on the Orthodox Christmas Eve. The table is laid with a white cloth, sometimes with straw laid underneath to symbolize the manger. An extra place is set for the Christ Child or for an angel or saint who may appear at the door as a needy stranger. Candles or a candelabra are lit. My grandmother would sing a ceremonial blessing hymn, and we would pray for the souls of those who had died in the past year, for those who would leave us in the year to come, and for the continued unity and prosperity of the family. These included hruba (mushroom soup), potatoes dressed with oil and sautéed onions, butter beans, several flavors of pierogi, and a babka or poppyseed roll. I no longer remember all the details of the ceremony, but I continue to carry on the tradition as I am able with my sons. This year’s ornament uses traditional Rusyn motifs to symbolize a wish for health, strength, long life and prosperity. I extend these wishes to all of you for the coming year. Stitchora Perry A.Hadi One of my earliest memories of this holiday was the buzz of conversation in the background that filled the house as my family prepared for this major event, while I sat under the dining table sketching whatever caught my eyes and stimulated my imagination. Pistachio Cheesecake Crust 400 grams digestive biscuits (or graham crackers) 100 grams butter, melted 1/4 teaspoon vanilla Sprinkle cinnamon Filling 1 egg 400 grams cream cheese, room temperature 1/2 cup sugar 1 tablespoon flour Topping 150 grams diced pistachios 1 teaspoon sugar 1 teaspoon flour 1 egg yolk Preheat oven to 350 degrees. For crust, crush biscuits until sand like in texture. Add butter and mix well. Add vanilla and cinnamon to the mixture. Spread evenly and press into the bottom of an 8-inch springform pan. For filling, beat egg well. Add cream cheese, sugar and flour. Mix well. Evenly spread cream cheese mixture over the biscuit crust. For topping, mix pistachios, sugar, flour and egg yolk together. Evenly spread on top of filling. Bake for 10 to 15 minutes. Refrigerate for 2 hours before serving. 108 Just CrossStitch StitchyFish Designs Lee Fisher Sticky Toffee Pudding Toffee Sauce 21/2 cups heavy cream, divided use 1 cup sugar 1/2 cup light corn syrup 1/2 cup unsalted butter Cake 6 ounces dates, pitted 3/4 cups water 1 cup plus 2 tablespoons flour 1 teaspoon baking powder 1/4 teaspoon baking soda Pinch salt 3/4 cup light brown sugar 1/4 cup unsalted butter, plus additional for greasing 1 teaspoon vanilla 1 large egg 1/4 teaspoon orange zest Whipped cream, for serving For the toffee sauce, in a heavy saucepan over medium heat, combine 11/4 cups of the heavy cream, sugar, corn syrup and butter. Cook, stirring often, until mixture turns a dark amber color, about 40 minutes. Carefully add the remaining 11/4 cups heavy cream. Caution: Mixture will bubble up and it is hot! For the cake, preheat oven to 350 degrees. Grease 7 (1/2-cup) ramekins with butter and set aside. Combine the dates and water in a small saucepan and cook until the dates are softened, about 15 minutes. Puree in a blender and cool. Combine the flour, baking powder, baking soda and salt in a small bowl and set aside. In the bowl of an electric mixer, cream the brown sugar and butter until light and fluffy. Add the vanilla, egg, orange zest and date puree. Stir in the dry ingredients. Divide batter into the prepared ramekins and bake about 20 minutes. Cool slightly and remove the cakes from the ramekins. Slice the cakes in half horizontally. Rinse out and dry the ramekins. Pour a little toffee sauce in the bottom of the ramekins and top with the bottom layer of the cake. Add more toffee sauce, place the upper cake layer on top and cover with more sauce. Heat slightly before serving, invert onto plate and, yes, cover with more sauce. Serve with whipped cream. Tempting Tangles Designs Deborah A. Dick Dad’s Scalloped Oyster Casserole 3 cups coarsely crushed buttery crackers or saltine crackers 3/4 cup butter, melted (do not brown) 4 cups shucked small oysters with liquor (if oysters are large, cut into quarters with a sharp knife) 1/8 teaspoon cayenne pepper Salt and pepper to taste 2 tablespoons chopped fresh Italian flat-leaf parsley 1 cup heavy cream (I recall in hard times that Dad used chicken broth in place of cream) JUST-CROSSSTITCH.COM Christmas Ornaments 2020 Preheat oven to 375 degrees. Mix crackers and melted butter in a large bowl; carefully stir until all crumbs are coated with butter. Spread 1/3 of the crackers mix on the bottom of a 13 x 9 x 2-inch casserole dish. Pour half of the oysters with their liquor over the cracker mixture. Season with cayenne pepper, salt and pepper. Repeat with next 1/3 of crackers and remaining oysters. Season with cayenne pepper, salt, pepper and parsley. Sprinkle remaining cracker mix over the oysters. Drizzle cream slowly and evenly over the top. Bake until bubbling and browned, 40 to 45 minutes. The Little Stitcher Laura Rimola Here in Italy, where I live, Christmas is represented not only by Santa Claus or Saint Nikolas, but also by Saint Lucia, who symbolically brings light and food during the winter solstice and gifts to good children. Coming silently on the back of her donkey on the night of Dec. 13, she is eagerly awaited and loved by everyone. Her tradition is also deeply felt in Sweden, where she appears crowned with burning candles and gives toys and her “sun buns”—the Lussekatters. As a child I always loved Saint Lucia very much. On her day I received dried fruit and nuts such as walnuts, figs and almonds, as well as mandarin oranges and a small toy. Now that I have grown up, I have not abandoned this tradition, but I have replaced the toy with a symbolic gift: a beautiful candle to keep lit throughout Saint Lucia’s sacred celebration. Lussekatter The Lussekatter are typical Swedish Christmas buns, made with saffron. The saffron makes them a brilliant yellow to symbolize the return of the sun in the middle of winter, during Christmastime. Traditionally, they are a gift of Saint Lucia for the winter solstice and Christmas celebrations. The Lussekatter are better and softer when heated. You can put them in a tin and warm them in the oven each time you want to eat one. Raisins 75 grams unsalted butter 1/2 cup (150 milliliters) milk 1/2 teaspoon saffron 25 grams fresh brewer’s yeast or 10 grams dried yeast 3 cups flour 5 tablespoons sugar Pinch sea salt 1 beaten egg for glazing Place raisins in a bowl with some hot water until they become soft. Melt the butter in a pot over low heat, and then add milk and saffron. Heat until just warm, not more than 37 degrees C/100 degrees F. Stir in yeast and let set 5 minutes. In a large bowl, whisk together flour, sugar and salt. Add the butter/milk mixture and combine to make a soft dough. Knead until the dough is homogeneous, elastic and smooth. Place dough in a large greased bowl, covering it with a cloth, and let rise for 2 hours. Preheat the oven to 220 degrees C/425 degrees F. Cover a baking sheet with parchment paper or grease the pan with butter. Cut the dough in 10 to 12 equally sized pieces. Roll each piece until it is about 30 centimeters long, and then curl each one into an “S” shape. Place the buns on the prepared baking sheet, brush with the beaten egg, and put a raisin into the center of each “S” curl. Let rise 30 to 45 minutes. Bake for 10 to 15 minutes, until golden brown. Leave to cool a little while before serving in a pretty Christmas dish. The Queen Stitch Sharlotte DeVere When I was a child, a very special treat at holiday time was to visit Lewisburg, Pa., to visit my grandmother’s nephew. He owned The Purity Candy Company, and we were allowed to go behind the scenes to see all the luscious candies being made! The ladies putting the chocolate on the creams, turtles, covered nuts and pretzels, and making nonpareils fascinated me. Their fingers seemed to be on autopilot as they chatted and worked with the tempered chocolate on cool, marble tables, and put the “secret code” special swirl on each chocolatecovered cream to indicate what was inside. The chocolate and peanut butter straws, hard candies, ribbon candy and lollipops were a different kind of amazing as the hot, brightly colored sugar mixtures were manipulated, formed and cooled. Christmas has always been HUGE in my family—there was a time when our house was decorated with Santa Clauses year-round! So, of course, my Christmas memories are hard to narrow down, but it seems fitting for my first ornament issue to share my favorite family ornament tradition. From their very first Christmas, every year my mom gave my dad a silver bell ornament with a small charm engraved with that year’s most memorable occasion. There was a new silver bell every year to celebrate births and pets and vacations. For their 25th (silver) anniversary, they decorated one Spritz Cookies ½ cup butter, room temperature ¼ cup shortening ¾ cup sugar 1 egg 2 teaspoons vanilla 2 cups flour ¼ teaspoon baking powder ¼ teaspoon salt Colored sugar Cream together butter and shortening. Add sugar, beating until fluffy. Add egg and vanilla, beating well. In a small bowl combine flour, baking powder and salt; add to creamed mixture. Dough will be stiff. Shape by hand or load into a cookie press and place cookies on baking sheet. Sprinkle with colored sugar. Bake at 375 degrees for 8 to 10 minutes. tree all in silver along with all their bells and memories. My husband and I continued that tradition. Just over 20 years later, I celebrated my 10th Christmas with my husband and gave him his 10th silver ornament. In 15 more years, we’ll have our own silver tree celebrating our own memories. Then, perhaps, we’ll have to change to gold ornaments and head to our 50th! Melt butter in saucepan over low heat. Remove from heat and add sugar. Stir with wooden spoon until sugar is dissolved. Return to heat and stir until mixture begins to bubble. Add water and corn syrup; mix. Cook over low heat to 290 degrees (brittle stage, approximately 15 to 20 minutes), stirring frequently. Remove from heat. Add nuts if desired; mix. Pour onto prepared cookie sheet. While candy is cooling, loosen from pan with spatula several times. When candy is cool, spread melted chocolate chips on top (or pour unmelted chips on the candy while the candy is still hot and spread the chocolate as it melts).
